Almond milk is extremely simple to make. But, a good homemade drink like this is SO good for you! As long as it’s unsweetened, it’s lower in calories than other milks (50% less than cow’s milk)! It’s also free of cholesterol, saturated fat and, for those avoiding dairy, it’s naturally lactose free.
It contains minerals like calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc. As well, it contains vitamins such as vitamin C, vitamin B6, thiamine, riboflavin, niacin, folate, and vitamin E. All these nutrients have various benefits which are essential for a healthy body.
Ingredients
1 cup almonds (raw & unsalted)
4 cups of water
1/2 – 1 tsp vanilla extract
Preparation
Soak almonds overnight in filtered water and a with piece of Kombu (seaweed).
Drain, remove and discard the Kombu.
Put almonds, water and vanilla extract in blender and blend on high speed until as smooth as possible.
Stretch a piece of cheesecloth across a large bowl and pour the mixture into the bowl through the cheesecloth. Squeeze the pulp to extract all the milk.
Pour the “milk” into a container and store in the fridge.
I don’t add any sweetener but, if desired, you can add a bit of honey, cinnamon or agave nectar.
As well, you can substitute any nuts (or even seeds like sunflowers) to make your milk.
