Here’s a simple, but tasty, recipe for for an avocado pesto. Add some zest and zing to your sandwiches with this creamy condiment. Just spread a tablespoon or two on one of your bread slices. Or, use it as a topper for your favorite pasta!
Play around with the ingredients too if you like. Switch out the basil leaves and use cilantro, or chives. Add some pepper or chili flakes to add a spicy tang to it. Cut back on the water a bit and add the juice from a couple of fresh limes. Be creative and enjoy!
Ingredients:
1 Large ripe avocado
6 – 7 Large, fresh, basil leaves
1 1/2 tsp Pink Himalayan salts
1/2 Clove of raw garlic
5 – 6 Raw cashews or raw pine nuts
1/4 cup Filtered water
1 tsp Nutritional yeast (optional) for cheezy flavour
