A neighbour posted this recipe on their Facebook page and suggested it was a quick and easy recipe for having some tasty bites on hand. We agree! They ARE quite easy to make and are very tasty! As an extra bonus, they’re gluten-free and have no added sugar. But, we do like to add in the “optional” items for some added protein – and taste!
Ingredients
- 3 smashed bananas
- 1/3 cup apple sauce (or date paste*)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 cups rolled oats
- 1/2 cup raisins
Optional:
- 1/2 cup sliced almonds
- 1/2 cup chocolate chips
Preparation:
- Mix the bananas, apple sauce, vanilla, cinnamon and nutmeg together.
- Add rolled oats, raisins and optional ingredients, then mix again.
- Mixture can then either be pressed/spread about 3/4″ thick into a baking dish (lined with parchment paper) and cut into individual “bars” after baking OR dropped on a cookie sheet, by spoon, as individual cookies. If you’re doing the bars option, it might be easier if you pull it out about half way through the baking process, make the cuts and then put it back in for the remaining time.
- Bake at 350 degrees for 30 – 40 minutes.
Notes
- * Date paste can be made by soaking 4 – 5 pitted medjool dates with just enough water to cover them, for at least 2 hours and then blending them and the water.
- These healthy bars will keep at room temperature, for up to 3 days. They are best kept refrigerated and will keep for a week. They’re also freezer friendly and will keep frozen for up to two months.
