Recipe: Sweet Potato Biscuits

Sweet Potato BiscuitsFor a delicious alternative to the traditional baking powder biscuits, we’d ask you to consider trying these easy-to-make, and good for you, biscuits.

Ingredients:

1  Cup cooked sweet potatoes, mashed (can substitute with yams)
1/8-1/4  Tsp stevia (depending on desired sweetness)
2  Tsp Baking Powder (aluminum free)
1/2  Tsp Cinnamon
1/2  Tsp Ginger (I used dry)
4  Tbsp Olive Oil
1  Cup Spelt flour
1/2  Tsp Sea Salt
1/4  Tsp Ground Cloves

Preparations:

Preheat oven to 375.

Blend together sweet potatoes, olive oil and stevia until creamy.

Combine dry ingredients and then, using your hands, add them to the wet ingredients.  Grease cookie sheet with a little olive oil.  Form dough into biscuits and bake for 20 min.

I doubled the recipe because I had a huge sweet potato.  I also used a tbsp less oil and it turned out fine.  It made 10-12 fair-sized biscuits when doubled.

  1. I made these Biscuits for Thanksgiving. Everyone loved them. I tripped the recipe and used Buckwheat. My 2 year old nephew gobbled them up at dinner, for lunch and even breakfast. His Mom was happy to take some home for more healthy snacks.

    1. Although we haven’t tried it with this recipe yet, we’ve substituted fava or garbanzo flour in other recipes with good results. If you do try it, please come back and tell us how they turned out.
