Sometimes, traditional spaghetti and meat sauce can leave you feeling a bit “blech”, right? Especially if you’re at all gluten sensitive. Well, here’s an awesome alternative.
This is a great raw food recipe. Using zucchini, thinly sliced into spaghetti-like noodles, and a fresh marinara sauce, you can almost re-create your favourite comfort food. It tastes great and is good for you!
Ingredients:
2 large zucchini
1/4 tsp sea salt
1/4 cup olive oil, extra virgin
1 1/2 cup sun dried tomatoes, soaked in water
4 cups fresh sweet tomatoes
2 cloves of garlic
1 tbsp agave nectar
1/4 cup green olives
1/4 cup black olives
1 cup basil
2 tbsp tamari
Preparation
Shred the zucchini into long spaghetti-like strands with a spiralizer (can be bought at Triangle Healing Products) or peeler.
Marinate the shredded zucchini with the salt and 2 tbsp olive oil for 30 minutes.
Gently squeeze out excess water.
In a blender, process the sun-dried tomatoes and add the soaking water until you get the right consistency (a thick paste), 2 cups of fresh tomatoes, garlic and agave nectar. Pour into a large bowl.
Slice or chop the olives, dice the remaining fresh tomatoes, chiffonade the basil and add these ingredients to the bowl.
Add the remaining olive oil and the tamari. Stir gently.
Add drained zucchini to sauce and toss lightly to coat.
Makes approximately 4 servings.
