\"meat-sauce\"<\/a>This colourful and flavourful meat sauce recipe can be used for multiple purposes.\u00a0 It can be applied directly as a topping for spaghetti or other pastas (for a gluten-free meal, use brown rice pasta).\u00a0 If you want to add some beans, it can be used as a base for making chili. \u00a0Or, add some water to make it more liquid, throw in some cooked rice or barley (or quinoa) and use it as soup base.<\/p>\n

Ingredients:
\n<\/strong><\/p>\n\n\n\n
1.5 – 2 Lbs\u00a0\u00a0\u00a0\u00a0 Ground bison or chicken meat<\/p>\n

\u00bd\u00a0 ea.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Green, Red & Orange bell peppers (diced)<\/p>\n

3\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Celery stalks (diced)<\/p>\n

3 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Carrots (diced)<\/p>\n

1 cup\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Frozen corn niblets<\/p>\n

1 – 2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Onion (finely diced)<\/p>\n

2 cups\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Mushrooms (fresh, sliced)<\/p>\n

2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Med – lge cloves of garlic<\/p>\n

1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Medium zucchini<\/td>\n

1 Tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Fresh ground pepper (or \u00bd Tsp Cayenne)<\/p>\n

1 Tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Chili powder<\/p>\n

1 Tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cumin<\/p>\n

1 Tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Oregano<\/p>\n

1 Tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Basil<\/p>\n

2 Tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Olive Oil<\/p>\n

6 – 8 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Organic roma tomatoes<\/p>\n

1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Container of cherry tomatoes<\/p>\n

1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 13 oz (369 ml) can of tomato paste<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

Preparations:<\/strong><\/p>\n

Prepare the peppers, celery, carrots, zucchini and mushrooms (we use only organic) by cutting them into small, diced size, pieces.\u00a0 If you prefer larger chunks, that\u2019s okay too.<\/p>\n

In a large pot, on \u201cMedium\u201d heat, brown the meat.\u00a0 Stir occasionally so that the meat is broken up and doesn\u2019t end up in large chunks.\u00a0 Add in the basil and oregano.<\/p>\n

In your blender, add the tomatoes, the remaining spices and garlic cloves.\u00a0 Blend until smooth.<\/p>\n

Once the meat is browned, add the blended tomato mixture and stir to ensure that the spices are evenly distributed throughout the meat.<\/p>\n

In a separate pan heat up the olive oil and add in the mushrooms, bell peppers, celery, onion, zucchini and carrots.\u00a0 Stir occasionally to ensure the ingredients saut\u00e9 evenly.\u00a0 Once these ingredients are cooked to the desired tenderness, add to the meat\/tomato sauce in the large pot.<\/p>\n

Now, add the frozen corn and tomato paste and stir.\u00a0 Cut the cherry tomatoes in half and stir into sauce.<\/p>\n

After several minutes, turn the heat down to \u201cLow\u201d so that the mixture will continue to simmer.\u00a0 Stir occasionally and continue to simmer for \u00bd – 1 hour.\u00a0 Meat sauce is now ready to use.<\/p>\n
